Pink radish, first dish. No addition of salt or citrus. Crisp on top had gone soft and chewy. Brunoise raw radish underneath. Soft flavours, boring first dish. No fiery radish notes. Prawn, 2nd. Prawn shell puree, gritty, again no salt. No pure enjoyable Prawn head flavour. Cauliflower garnishes, no salt or flavour. Cauliflower vail, covering the prawn tartar tart just tasted of nothing, over set with the gelling agent. Prawns were nice. Some cubes of jelly, which again I have no idea of the flavour it was supposed to be. Enjoyable smoked almond cream. 3rd, tomatoes. Big dice tomatoes, with a cardamon and cocoa tuile, I think it was cocoa. The tuile was nice, intense and strong, worked well...

We ate here recently with three other couples, expecting to be WOWed by the food, wine and service. Only the food held par. We opted for the wine paring on the 8 course menu, thinking that such a fine establishment would pair the wines in interesting ways (and despite the fact that two of those in attendance are major wine geeks who could have dissected the long list with no problems). While the overall service was generally lacking for a michelin starred restaurant, the wine service was worse than even some lowly bistro. Unusually perhaps, we had not reserved or expected to stop at Alexandre 's restaurant . Friends were arriving at Nimes airport and we were ahead of time to pick them up. Signs led us to Alexandre 's and we happily found a table for 2. The ambiance was exquisite, beautiful views on all sides with flowers and banners of fabric in bright blue. Because we did not have hours to spend, we took items off the menu--courgette blossoms stuffed with truffle mousse for the entree and a combination of shrimps and squid grilled and served with lobster and crab. We did not see the 2nd star here and we don't understand how it can have been kept this year. Actually, we definitely had more interesting and tastier experiences in 1-star restaurants in the region. Food: nothing exceptional nor memorable, bland tastes, creams and mousse EVERYWHERE give the impression that every dish is the same, in texture but not only. Two plates were even visually quasi-identical (maybe a choice of the chef, but not one of interest for us). Atmosphere: potentially nice terrace but, perhaps due to covid, our table was almost in the garden and under a tree: a barrel of bugs hit us, our table and even the plates during the evening. one of the best dinners ever. the place is evocative, elegant, beautiful, full of decorative ideas, as welcoming as the staff who followed us and pampered throughout the evening. The kitchen is very high and in harmony with the place by its elegance, balance, authenticity. Intriguing, complex, exciting dishes such as the "roat tartar thought without its natural environment" or the "floating island with the truffles of the Provences", and many other masterpieces that make the emotions felt indelible. This restaurant is well worth the journey. The food is spectacular, and the staff are all very friendly and accommodating. The only issue we had was when sat outside for our aperitif, you are right next to Nimes airport runway so can be noisy for a minute of two as planes come and go. We will definitely be returning, really special place. Michel Kayser even drove us back to our hotel, how many 2* chefs would do this for their clients!? Amazing service.

a wonderful evening a romantic place, a warm timeless interior decor, one feels a welcome by Madame kayser and the chef! a service in the top-notch crockery room and on the plates, we go to discovery, the wines offered perfect dessert: the librarian of the chef: a fireworks' addition quite in relation to the culinary fireworks presented a very, very good evening and it was very very very good without any false note

What a meal. We had the 8-course dinner, and what a treat it was. I can not even decide which course was my favorite because every single dish was outstanding. Really cute is the Bibliothek des Gourmandises . The wine pairing is reasonably priced and well-matched.

What an experience. The food combination is amazing. All taste are genially balanced and the wine matching package is a must. The decor is fabulous.
