The restaurants open on Sunday are not so many in Tarbes. A good occasion today to have lunch in the 'Ambroisie' that we only knew of (good) reputation. Nice environment, quiet room. The service is assured with attention and kindness on a adapted rhythm: it's Sunday. Very nice kitchen to watch and taste. We have chosen a formula with agreement of dishes and wines: the sommelier makes us share some good ideas, while twisting the neck to some ideas received. Bravo. The room manager (we understand at the end that she is the Chef's companion, a very skilled and creative English practitioner who works beautiful products) illuminates every stage of the lunch with precision and friendliness.
