I found this restaurant to be decent. The chopped brisket sandwich was almost authentic, although the sauce was a bit different than typical Texas BBQ sauce. Usually, Texas BBQ sauce is not sweet and has some spice to it. Additionally, Texas BBQ places usually do not put enough sauce on the sandwich for my liking. However, this place had a unique sweet and tangy sauce that my taste buds were not expecting. It took a few bites for me to adjust to it, but I appreciated that they generously sauced the meat so additional sauce was unnecessary. I personally prefer this approach. This was our second visit. Our first was on the weekend and at the height of the dining hour, and everything was terrific. This visit was on a weekday at 5:30, the service was just OK, and our food was lukewarm to cool. Only two other tables had patrons, so we can only assume the kitchen wasn't up and running. They were beginning to add meats to the oven in the back, so we suspect ours was leftover from the lunch crowd. Disappointed since they made a reservation for that hour for us as though they were at full speed. Our daughters often frequent The Hill and were surprised that we were disappointed. Go later in the evening when they're busy.
I adore this restaurant! The atmosphere is fantastic and the food is very delicious. It may not be upscale dining, but the food is hearty and satisfying. You have to get your meat and sides from different stations, and the drinks are served separately. All of the meats were tasty, especially the Brisket. The sides were also amazing, from the coleslaw and collard greens to the macaroni and cheese. The drinks were excellent as well. The restaurant really excels in its atmosphere, with live music, charming decor, and lots of Texas vibes! Highly recommend.
I used to be a fan of HC, but the quality has seriously declined. If you think serving mesquite-flavored cartilage as a main dish is acceptable, then the ribs were only passable. However, receiving uncooked sausage that was cold and needed to be fully cooked upon arrival was the final disappointment. Unfortunately, we will not be returning to HC. On a positive note, the cornbread was tasty and the napkins were soft and pleasant.

I found the price to be a little high for the portion size, but the food was amazing. The flavors were definitely worth the cost, and the takeout packaging was excellent.
We really enjoyed our experience at the restaurant. The food and service were both fantastic and exactly what we were looking for.
If you want spareribs or brisket this is the place to go to. The food was excelent, and so were the service and prices.
Not Hill Country's best effort. Tasted a day old and underseasoned.
