I have known this catererer for 25 years and with regard to butchery and cold trays, there is nothing to say, however, the barquettes of the day are too often of poor qualities and in insufficient quantities. I work for a very large voegtlinshoffen winemaker we harvest more than 2 months and we have their barquettes every day (more than 30 meals / day) , the quantities are never the same from one barquette to another, the vegetables too cooked or not enough , the meats are pretty good on some barrels and others are full of fat and nerves at 50% . The worst part is that a colleague even found a debris of porcelain in his dish. Too bad the years pass and I'm good.
