We actually came here because we didn 't want to wait an hour a half at Edelweiss. But I was SO GLAD we stayed and gave them a chance. Honestly, as soon as we came through the door and I saw that carpet, I thought, Ooooooh boy, we may have made a mistake.... Sure- the interior is not as trendy as the newer places, and so it 's maybe even a bit dated, but it was clean, well layed-out, and the decorative partitions between tables made it feel more private and very old-school romantic.We were greeted so warmly seated immediately. My niece and her fiancé were in town for a few days, which included Valentines Day. Having a number of positive experiences there, encouraged them to go to Joseph's. After looking at the menu they agreed it looked great. However, they discovered when they arrived that the Valentine's Day menu was completely different and did not include fillets, which is what they had wanted. There was only one steak on the menu and it was a much more fatty cut than what they wanted. Which is crazy, since Joseph's is known for their fillets. This was absolutely the best experience I've ever had eating out. I was in from out of town, decided to treat myself for my birthday. I had the Famous Pepper Steak Flambe' and the caprese salad. Both were excellent, the steak was the best steak I have ever tasted, I believe my waiter was the owner. He was so attentive, he chatted with me for a bit, told him I was in town for work but chose to celebrate my birthday. After dinner, both his wife (I believe) and him came and brought me a chocolate cake and wished me a Happy Birthday, complete with a lit candle. This was probably our favorite dining experience in Colorado Springs. I had the Chilean Sea Bass special (pictured) and he had the Scampi Genovese. Both dishes were spectacular! It had a perfect crunch to the outside from searing and it was almost buttery on the inside. I had the 8th Street cocktail and it was like an elevated margarita. Delicious! Apparently reservations are typically necessary, but we went on a Monday night and it was just us and another couple. It doesn't get more romantic! Go to this place!
