The Fábrica del Canal is a restaurant that is defining a new style in Castilla. If you expect to find “Lechazo y Lechuga” (roast lamb) you are wrong. We got the tour starting with the restaurant, that keeps the old machinery of a flour factory intact, up to the 3rd floor to the new hotel rooms. Absolutely amazing !!The designers did a great job, restoring and renovating this old factory into an elegant and luxurious place. The food in the restaurant is superb, we loved especially the Parpatana de atun (delicious red tuna), the Habitas and the Canelón de Mango. The whole experience was impressive, because of the special atmosphere of this historical building, the food and the friendly stuff....
El lugar está bien ambientado, en una antigua fabrica de harina del canal de Castilla, el personal atento, pero sin muchas explicaciones, la comida, normal, nada destacable, y con algunos platos muy confusos, un Tataki que parece y sabe a Ceviche, un sándwich de lechazo con el exterior complicado de comer, el vino servido, si cata previa y dejando la botella en la mesa, en definitiva relación calidad precio incorrecta y como sorpresa, se cobra un suplemento si se comparten platos y otros detalles que un restaurant de esta categoria no debería de pasar por alto, para una vez y no volver, yo personalmente no se lo recomendaría a un amigo, pero cada cual a de tomar la decisiones por si mismo
the environment is wonderful, and the restaurant itself has been beautiful integrated into the old machinery and parts of the canal. The exquisite kitchen with quality products. I didn't think it was too high a price. taking into account the type of kitchen, attention etc. we were with friends and with young children, and even they were very a drop. they adapted to children's menu without losing quality. Very rich desserts.
the attention of the staff was very good. proper food and excellent presentation. but the prices are excessive. there are many more options with similar offer and more suitable prices. nothing to oppose quality and attention, different from quality/price ratio. We're not going back for this reason.

I had a dinner with friends at the restaurant La Fabrica. Everything was so perfect! The location is super lovely, the staff was very very friendly and most important, the food was just amazing! I would highly recommend this place to anybody! Thx for having us! :
very nice place. very well presented food although under my point of view it lacked some flavor. the quinoa salad didn't get me better the tempered ceviche of corvina, just go the lubine timbal and the best the Iberian feather and the dessert mango canelon
I went twice for coffee and drinks over the Christmas. The staff is friendly and attentive, cosy decoration where the original machinery is integrated. I look forward to coming back for dinner or lunch

We were surprised to see the welcome of the restaurant, the preparation of dishes and the exquisite treatment of the staff. highly recommended.
