Because of the cursed Covid, it took years to keep the promise of returning to ambrosia but an Asian saying the beef is slow but the earth is patient, so it is now done. In the first evening of the restaurant reopening, we were filled with the quality of the new map proposed by the Sebastian chef and that of the service run by valery his wife. All dishes of the menu/map to euros are delicious with in particular the gambas in entry, the holy stone and lamb in flat and the strawberry/biscuit lemon in dessert.Also let's mention that the room, terrace and parking were redesigned for the greatest comfort of the customers. Simply remarkable! Very warm and caring welcome. Airy space, tables well set and decorated with refinement. The menu is very well composed with very varied suggestions. The dishes are beautiful and well presented. The kitchen is very delicate. In short, great art. And what about the choice of wines, a very nice list. An address to discover without a doubt. A last minute booking because we had been let down by the unexpected closure of a nearby restaurant where we had a long standing booking for 9. All nine accommodated at a large round table and treated to a magnificent meal with choices available for all our fussy eaters. Staff attentive and service efficient. Quality and appearance of food superb and far above our expectations. Why no Michelin ?
Went here for lunch, had the 4 course menu. All courses were beautifully presented and tasted amazing, and the little tasters on arrival were equally lovely and a nice touch. Good choice of wines and the sommelier was very helpful when asked for advice. Overall would recommend a visit to this place even though it’s a bit out from Carcassonne (although we got there by bus to Pezens)
We came on May 15 to celebrate our 40th anniversary. this restaurant was at the height of the event both by the reception and by the dishes we tasted. personal atmosphere with a small presentation of care and a taste of dishes at the top! Thanks and above all don't change a restaurant to recommend the eyes closed.
A second experience as good as the first. The setting is magnificent. Each dish brings its share of surprises and flavor. The menu changes every 6 weeks so we are always surprised. Still plan a good budget but it's worth it. We recommend .

Very good service with good advice, a warm but elegant atmosphere, and absolutely incredible cuisine! Light but rich in taste and flavor, we arrive at the end of the meal satisfied and delighted!
