Update July 2023: This was my second visit to Laredo and I was slightly disappointed compared to my first visit. While the food was flavorful, there were some issues along the way. The vegan tamales with non-dairy cheese were a unique twist, but the filling seemed like a frozen veggie medley, lacking in heartiness. The Hawaiian fajita platter was delicious, but came with only three small tortillas, making it difficult to share the dish. When we requested more tortillas, we were charged extra, which was disappointing. Despite these hiccups, I still consider Laredo a four-star restaurant overall. It is very uncommon to come across vegan choices at Mexican eateries, but Laredo offers a dedicated vegan menu. I was also pleasantly surprised to see tofu on the menu, which is not typically found at Mexican restaurants. The food was absolutely delicious as well! I will definitely be returning in the future.
