Dimanche 16 juin 2024 nous avons mangé au Castellas de Sivergues remarquable établissement dans le rapport qualité prix et dans le lieu. Lundi 17 juin 2024 nous avons mangé au Café de La Fontaine à Joucas. Dans l’entrée de l’établissement le Chef Xavier Mathieu, saluait les clients bon pied bon œil aimable, souriant, ça met à l’aise. Nous nous sommes installés près de la Fontaine. Très mal reçu par un maître d’hôtel manifestement agacé agacé de quoi on se demande ? De notre âge ? Un temps record pour servir un apéritif, qui est arrivé tellement tardivement qu’on avait mangé tous les amuses bouche. Un bon souvenir il y a quelques années mais une grande déception cette fois. Installés sur une terrasse sans charmes et non près de la piscine, on nous a servi des plats corrects mais sans grande recherche ni surprise avec un service minimum effort. Un champagne pas frais (25€ , des vins locaux (14 et 16€ dont un vin blanc à température ambiante et un rouge froid !! Et sans aucune présentation ni dégustation des vins serviseffet fin de saison (10/09 ????pour un bistronomique d’un hôtel 5 étoiles, accolé à un restaurant étoilé ce n’est pas acceptable !!! Quelle jolie découverte. Le café de la Fontaine offre une qualité des mets remarquable tout autant qu’un cadre idyllique. Logé en terrasse du Relai Château Le Phebus, nous découvrons un magnifique endroit et parc au centre d’un paysage silencieux et naturel. Le service est agréable et discret, l’ambiance confortable pour ce bistrot au dress code plutôt relax. Nous avons choisi un menu à deux plats, vin au verre possible. Dans ce décor raffiné et luxueux, et décontracté, je vois mon entrée de fenouil et c’est presque dommage de rompre l’équilibre parfait des fleurs mises sur le dessus. What a lovely discovery. The Café de la Fontaine offers remarkable food quality as well as an idyllic setting. Housed on the terrace of the Relai Château Le Phebus, we discover a magnificent place and park in the center of a silent and natural landscape. The service is pleasant and discreet, the atmosphere comfortable for this bistro with a rather relaxed dress code. We chose a two-course menu, wine by the glass possible. In this refined and luxurious, yet relaxed setting, I see my entry of fennel and it's almost a shame to break the perfect balance of the flowers placed on top. Excellent memories of these moments in this haven of peace. On the evening of our arrival we have dinner at the gastronomic restaurant Xavier Mathieu. Dedicated to a 3-star dinner, this dinner will be engraved in our memories and is part of the most beautiful tables we have been able to discover in the region. The soup with pistou, the mixture land and sea of the pig with caviar are simply great art!. Perfect service, very attentive staff. Our room was spacious, tastefully decorated, with great comfort. The next day breakfast on the terrace: a treat! Follow a little relaxation at the spa: perfect! Finally, a stop at the bistro: the feet and packages are excellent! Quick and careful service....
Much too expensive for what is proposed. The terrace is OK but too close to the pool and hotel holidaymakers. The dishes are acceptable, but not at this price. When we compare with Nutile's bistronomial in Nimes, there is a world of difference. Finally, 13 EUR the glass of rosé is 4 euros more than the Table d'Uzès in the region also... but with a star. Good for tourists.

Un moment d'évasion pour une table d'exception. La créativité visuelle ne l'emporte pas sur la qualité, les deux se marient idéalement pour une soirée détente.
