Chef Vuigner has managed to preserve specialties such as free-range poultry (cooked to die for: soft on the inside, crispy on the outside) and foie gras carpaccio. In addition, he innovates with work on spices and more exotic flavors. The market menu always offers quality products at a balanced price.
