the place has a little disappointing charm but, a certain charm. I had dinner on the brewery side (there is a "gastronomic restaurant" and a "Brasserie" side). I chose the buffet entrances (shrimps, lentils, herrings, cutters, etc.). and a meal of the day to the salmon. The kitchen is nicely traditional, the service is kind and attentive. The place is about the tumult, like the city.
Coming to Chaumont for a working day, we spent a night at the hotel of the ramparts. Everything was perfect. warm welcome, attentive staff. Nice and comfortable room very well equipped.
