The freshness of the shellfish is certainly very important, but that is not everything. It’s a shame that the Paletuvier in St Gély closed because the managers were much nicer than those at the shell house. I think that being the only one now on St Gély is getting to his head to define the price of his trays, especially since the owner is not at all helpful, I would even say not at all commercial.
