I really wanted to love Muteki Ramen since it’s the closest spot to traditional ramen shops like Ippudo and Ichiran in downtown Jersey City. Unfortunately, my experience was a bit of a mixed bag. The Muteki Wings had a good texture, but the yuzu miso sauce that was supposed to accompany them tasted more like heavy sugar, with no real hint of yuzu or miso. My Spicy Tonkotsu Ramen was quite disappointing—bland and lacking spice or umami, with a broth as dull as potato salad with raisins, though the noodles were nice. On a brighter note, the Yuzu Shio Ramen was excellent and hit a craving I’ve had since Mentoku Ramen closed in NYC, delivering a delightful yuzu-based broth. I’ll probably return,...
