I strolled over to one of the numerous food trucks near the Waco Hilton for lunch. Silver Creek Ranch has a welcoming atmosphere and ample seating. We tried the Chopped Pork and Chopped Brisket Sandwiches accompanied by Potato Salad. The meat was tender and complemented by a mildly sweet BBQ sauce. The potato salad reminded me of what you can find at HEB. Overall, it was a great meal, with two servings for around $20.
We had lunch there today. Pork sandwich and cricket sandwich for the hubs. He said the brisket was hood and I cN say the pork sandwich was excellent. It was a beautiful day to be eating outside. I highly recommend this food truck on steroids!!!!
Best chop pork sandwich I've ever had! Thick Texas toast, grilled and smothered in bbq sauce with juicy cuts of pulled pork. They have stuffed baked potatoes, Frito pies, and chopped beef on bun, bbq plates and pie! #pullover

I never liked crab until I visited this place, which should tell you just how excellent it is! The customer service is incredibly friendly, and I always enjoy coming here.
The barbecue was excellent, and the unique setting of a food truck added to the experience. It was fantastic!
