35 years ago when we went to the first half-armed restaurant in laguiole, we were dazzled by the one who was going to become a reference. here too, with a 5-course menu at 75 €, four wonderful hours as in a ceremony. exceptional products sublimated by agreements and presentations combining france and japon, in service as well. with 5 glasses of wines (and even with fruit juice for one of us) and coffee, we paid 125 euros.
We had the great chance to have lunch with Chief Hamano. Everything is refined, delicate and precise: dishes, wine and service. What about the morilla on his pineapple disc? Smiling, friendly welcome. Refined cuisine, courteous service. the chef does everything to satisfy your requests (for example, replaces meat with fish). Everything is perfect.
I don't think for a second that there isn't a lot of hard work and dedication that goes into what they do here, but ultimately I was pretty disappointed
