I spent a month in Thailand once and I saw a street vendor make this dish that had a kind of meat (turned to chicken, but in Southeast Asia you never know) and cashews. It looked delicious, so I ordered one. It was even more delicious than it looked. It was also so hot that at that time I got halfway through the plate, it felt like I chew glass because my mouth was on fire. I couldn't stop eating because it was just too good. I was looking for Thai Cashew chickens of this quality ever since and had all, but abandoned hope until I stopped in Erawan on a day and saw it on the menu. #41, Gai Pad Ma Moung, is so ridiculously good, and the most authentic I found everywhere I saw on the east coast...
