Regarding the pappardelle, it appears that, based on photos shared by others, it was previously served in a watery tomato sauce but has since transitioned to a red/pink cream sauce, which I actually prefer. However, I would suggest placing the ricotta in the oven for 30 seconds, as I didn’t enjoy the contrast of cold ricotta on top of hot pasta.
As for the Carbonara, it seemed to use a sauce reminiscent of Alfredo, though I could be mistaken. There was an odd aroma, almost burnt cream or like a cream-based sauce stored in plastic before serving. I’ve had Carbonara in numerous places, and this one didn’t quite measure up.
