The Paella is not the national dish of Spain, though foreigners tend to think so. My wife and I have been ordering it in selected places all over Spain for years, and it 's always a disappointment: little or no saffron, the rice is hard and sticks to the bottom, the mariscos chewy and insipid, and so on and on. We even drove from Cuenca to Valencia to have a proper paella at the most celebrated dive there specializing in the dish: yet another disappointment. But we remembered from another trip years ago that in Galicia things are different. And at Taberna Plaza we finally had an excellent, indeed memorable paella.
