The Sobo Ramen Pop-up operates exclusively from 9 p.m. to midnight on Fridays and Saturdays, using the space of their regular ramen restaurant. You can choose to sit at the counter or at a table, though there's no guarantee of seating if it's busy. The staff seamlessly shifts over from the main restaurant when they close.
The pop-up menu is limited but covers most of the basic dishes and bowls. I found the ramen to be surprisingly good at this late hour, with more flavor than what you might expect from their regular offerings. The broth was incredibly delicious—I even tipped the bowl to drink it!

This is a lively late-night pop-up bar at Sobo Ramen, offering a variety of sake, beer, and soju drinks, along with a selection of ramen dishes, lamb and chicken skewers, edamame, and sanma (mackerel pike). The service is excellent, the food is tasty, the drinks are delightful, and the atmosphere is enhanced by upbeat music, with episodes of I Love Lucy playing on the TV.
The ramen was quite ordinary and didn't justify the price. Out of our group of five, only three of us ended up ordering and eating. Additionally, we were charged a service fee just because we had five people at the table, even though the restaurant was slow and only had three groups in total during our visit. I have no intention of returning.
I really adore this restaurant. The handcrafted noodles and tasty broth choices are just incredible. As soon as the weather gets cold, I make it a priority to come back every couple of weeks.

The food was average; I’ve had better ramen at other places. Unfortunately, I ended up with food poisoning and ended up vomiting my entire meal.
