Wanted to give a 3.5, I've gone there twice first time I had the Ribs and House sausage. The 2nd time I had a slice beef Sandwich and I'll Break down each food.Ribs 3.5 To me ribs either need to have good season or a good smoke to them. Whatever bit of season and smoke these ribs had were masked by the amount of black pepper that was on it. I like ribs with black pepper but there has to be some other flavors underneath it. I also believe they could have been cooked a bit longer. Had a bit too much bite and looked a bit undercooked.Sausage 2 It simply was not to my taste. Sunbird Barbecue is a true gem! The barbecue and sides are incredible, and my personal favorite is the burnt ends. They switch up the marinades regularly, and each one has been delightful. Last time, I tried the burnt ends soaked in Arnold Palmer, and they were a definite standout. The mac and cheese is flawless, and the ribs, brisket, and pulled pork are simply amazing! The smoke pit is located right behind the food truck. Excitingly, they will soon be opening a restaurant in downtown Longview, which will make it even more accessible.
I absolutely love the pork and brisket here! The jalapeños are incredibly fresh and pack a nice spicy kick, while the corn is fantastic. The tacos and sandwiches are also excellent. Overall, it's a wonderful barbecue restaurant!
Food trucks are the best! Local people bringing high quality food right to us. BBQ is not an easy culinary field to tackle but Sunbird has done it. I loved their sauce and sides just as much as their meats.

I just enjoyed a brisket, pork, and turkey taco, and it was fantastic! I’ve never had a turkey taco before, but I will definitely be ordering this again. Five stars!
