If spice is your thing, this is the place. All the dishes for the most part are super spicy so brace yourself. It seems like a mom and pop shop ran by this couple. When we were there however, the owner had a fight about infidelity with his wife and throws the menu and note pad he was gonna take order from and had the whole argument in front of our party of 11. It got a bit awkward as we were originally gonna order prior to the situation. I visited this restaurant twice for takeout over the past few weeks, and it did not disappoint. The spicy beef pickle noodle (dry noodle) may appear simple, but it is incredibly delicious. The flavors combine perfectly with the noodles. During my second visit, I tried the main beef noodle soup, which is the first item on the menu, and it was truly fantastic. I've had a lot of excellent beef noodle soup in my life, and this one really stands out. On both occasions, the shop was empty. Although the location isn't bustling, the flavors are outstanding! This place offers better noodles than many of the more popular Sichuan restaurants and is perfect for anyone who enjoys spicy food.
Just like the other reviews here, the service was great. You can tell they're putting in the effort to refine their dishes by asking the customer questions about their experience even asking if dishes were too spicy or not. Food came out quick and prices are definitely on the cheaper side, but that doesn't mean flavor is lacking. Cooks I believe are from Chengdu and they love it spicy and flavorful. Great experience and definitely recommend this small business.
Noodle Bistro is one of the BEST authentic Szechuan food restaurants I've ever been to. Considered gatekeeping this restaurant because it's just THAT good, not to mention affordable with amazing and attentive service, but they definitely deserve the recognition. Highly recommend checking it out if you're in the 626 region, and if you're unsure about what to order they give great recommendations :

This restaurant is quite popular. We tried the beef rolls and the pork with Napa dumplings, but I found the dishes to be a bit too salty for my liking.
Chef Jeremy is fantastic! He prepares authentic Sichuan flavors, and the noodles are incredibly soft. It's a truly lovely restaurant.
